Grilled Chicken Sausages with Peppers & Onions

Ingredients:

1 pound sweet peppers, seeded and sliced
1 large onion, sliced
3-4 T Extra Virgin Olive Oil
¼ t Kosher Salt
1 package Sweet Italian Sausage Links
Sliced Italian or Sourdough Bread
3-4 leaves fresh basil, chopped

 

Preheat grill to medium heat. Prick sausage links with fork. In a bowl, toss peppers and onions with 3 T olive oil and salt. Using a grill basket, cook peppers and onions for about 10 minutes until soft and golden. Add basil to mixture and set aside. Place sausages on grill and cook through, turning occasionally. This will take approximately 12-15 minutes. Drizzle remaining olive oil on bread and place on grill until warm and crispy. Serve by placing toasted bread on plate and topping with sausage link and onion/pepper mixture.
